ABSTRACT This study aimed to develop and assess the physicochemical, sensory parameters, and shelf life estimation of multicomponent snack bars based on tapioca flour, Brazil nut, and açaí or cupuassu pulp. The physicochemical composition of açaí- and cupuassu-flavored snack bars had, respectively, 0.92 and 0.99% ash, 19.22 and 17.02% lipids, 3.02 and 3.03% protein, 1.06 and 1.69% fiber, and 448 and 436 kcal/100 g energy value. The shear stress test showed the consumer needs to bite more strongly to break the açaí-flavored bar. The opposite was observed in the hardness test, in which the bite compression force during mastication was greater for the cupuassu-flavored bar. The bars had water activity below 0.6, which denotes microbiological stability. The sensory analysis ranked the bars between "liked slightly" and "liked very much," which was confirmed by the acceptability index above 75% for all attributes assessed. According to the results a significant increase in water activity over storage was observed suggest the packaging used in the tests did not present a satisfactory barrier to water vapor permeability. Only water activity was used to estimate shelf life, which was determined as 58 days and 49 days for the açaí- and cupuassu-flavored bars, respectively. Thus, the snack bars represent an alternative for athletes as well as individuals with celiac disease since they are gluten free.


RESUMEN El objetivo de este trabajo fue desarrollar y evaluar los parámetros físicos, físico-químicos, microbiológicos, sensoriales y la vida útil en estante de barras a base de harina de tapioca, castaña de Brasil y pulpa de açaí o cupuaçu. En cuanto a la composición físico-química, las barras multicomponentes sabor açaí y cupuaçu presentaron, respectivamente, 0,92 y 0,99% de cenizas, 19,22 y 17,02% de lípidos, 3,02 y 3,03% proteínas, 1,06 y 1,69% de fibras y 448 y 436 kcal/100g de valor energético. La prueba de cizallamiento y dureza mostraron que el consumidor necesita una fuerza de mordida mayor para romper la barra sabor açaí. El comportamiento contrario fue observado en la prueba de dureza donde la fuerza de compresión de la mordida, durante la masticación, fue mayor en la barra sabor cupuaçu. Para el análisis sensorial se observó que las barras evaluadas recibieron notas situadas entre las categorías "me gustó ligeramente" y "me gustó mucho", resultado comprobado por el índice de aceptabilidad con valores superiores al 75% para todos los atributos evaluados. De acuerdo con los resultados, se observó un aumento significativo en la actividad de agua durante el almacenamiento, lo que sugiere que el embalaje utilizado en las pruebas no presentó una barrera satisfactoria para la permeabilidad al vapor de agua. Para la estimación de vida de estante sólo la actividad de agua fue utilizada para los cálculos, siendo el tiempo de vida de estante determinado en 58 días para la barra sabor açaí y 49 días para la barra sabor cupuaçu. Así, las barras multicomponentes elaboradas representam una alternativa para atletas, así como para portadores de la enfermedad celíaca, visto la ausencia de gluten en su composición.

ABSTRACT

This research aimed to evaluate 32 genotypes of Oenocarpus distichus fruits regarding the contents of total phenolic compounds, flavonoids, flavanols, monomeric anthocyanins, antioxidant capacity (ABTS and DPPH assays), and the phenolic compound profiles of the five genotypes that presented the highest yields of bioactive compounds. The genotypes were harvested in three different locations in Pará State, Northern Brazil, (Belém, São João do Araguaia and Marabá). Among the 32 genotypes, the highest bioactive compound contents and antioxidant capacity were found for three genotypes harvested in Belém (B-3, B-7 and B-8) and two harvested in São João do Araguaia (SJ-1 and SJ-4), and the total phenolic compounds varied from 131.97 to 363.01 mg gallic acid equivalent/100 g, total flavonoids from 24.23 to 38.19 mg quercetin equivalent/100 g, total flavanols from 72.29 to 259.18 mg catechin equivalent/100 g, and monomeric anthocyanins from 21.31 to 67.76 mg cyanidin 3-rutinoside/100 g. The main phenolic compounds tentatively identified in the five selected genotypes were cyanidin 3-O-rutinoside (48.47 to 196.51 µg/g), which could be identified and quantified as the major phenolic compound in Oenocarpus distichus fruits, for the first time, followed by chlorogenic acid (0.71 to 64.56 µg/g) and rutin (13.98 to 56.76 µg/g).

ABSTRACT Snack bars were launched on the market as an alternative for people seeking healthier food options. They are popular portable snacks commonly eaten between meals. This study aimed to develop snack bars made with tapioca flour, Brazil nut and native fruit pulps (açaí, cupuaçu, muruci and taperebá) as well as to assess their physical, physicochemical, microbiological and sensory attributes. The preferred concentration of fruit pulp was 10% in the açaí bar, and 15% in the cupuaçu, muruci and taperebá bars. The acceptance rate of the açaí bars was greater than 70% for the attributes appearance, color, texture, and overall impression, but was lower for flavour. This result may be related to the eating habits of some panelists, who eat açaí pulp without adding any other ingredients that can impart the unique flavour of the fruit. The cupuaçu and muruci snack bars had higher sensory acceptance than the açaí and taperebá bars; therefore, they are more likely to have better market prospects.


RESUMO Como uma alternativa para as pessoas que procuram opções para uma alimentação saudável, as barras de cereais foram lançadas no mercado. Elas são populares como alimentos portáteis e podem ser consumidas entre as refeições. Este trabalho teve como objetivo desenvolver e determinar as variáveis físicas, físico-químicas, microbiológicas e sensoriais de barras de cereais à base de farinha de tapioca, castanha-do-brasil e polpas de frutas regionais (açaí, cupuaçu, muruci e taperebá). A concentração preferida de polpa na barra sabor açaí foi de 10% e nas barras sabor cupuaçu, muruci e taperebá de 15%. O índice de aceitação da barra sabor açaí foi superior a 70% nos atributos aparência, cor, textura e impressão global e inferior no sabor. Este comportamento pode estar relacionado à cultura de alguns provadores, os quais têm o hábito de consumir a polpa de açaí sem adição de qualquer outro ingrediente que possa mascarar o sabor intrínseco e peculiar do fruto. As barras sabor cupuaçu e muruci, por apresentarem maior aceitação sensorial, quando comparadas às barras sabor açaí e taperebá, têm melhores perspectivas de mercado caso sejam comercializadas.

Fruit breeding programs have resulted in bioactive compounds increase and health effects. Thus, this study aimed to evaluate the antioxidant activity and neuroprotective effects of the hydroethanolic extracts from six açaí (Euterpe oleracea) genotypes using ABTS, deoxyribose, and glutathione oxidation assays, as well as, SH-SY5Y cells insulted with H2O2. L22P13 genotype showed the highest total content of anthocyanins, while L06P13 showed a high content of total carotenoids. However, the genotypes showed no difference in the antioxidant activity by ABTS and deoxyribose assays. The hydroethanolic extracts from different genotypes of açaí showed a protective effect (13-62%) on SH-SY5Y cells insulted by H2O2 at a concentration of 50µg/mL by DCFH-DA assay. Except L04P16, no genotypes showed cytotoxicity in the SRB assay. These results indicate that açaí genotypes have antioxidant effect against reactive species generated in SH-SY5Y cells, suggesting a neuroprotective effect of the hydroethanolic extracts from these fruits.

BACKGROUND: Açaí has been reported to contain many bioactive compounds, including phenolic compounds such as anthocyanins. This study aimed to determine the chemical composition and antioxidant potential of pulps of three different açaí genotypes from the Active Germplasm Bank of Embrapa Eastern Amazon and three commercial açaí pulps from Belém, state of Pará, Brazil. RESULTS: Anthocyanin 3-rutinoside was the major anthocyanin present in freeze-dried açaí pulp samples. The commercial sample C showed the greatest amounts of cyanidin 3-glucoside and cyanidin 3-rutinoside (18 942 and 34 397 µg g-1 respectively). The content of phenolic compounds varied significantly among the commercial and genotype samples, and vanillic acid was found in the highest concentration in the samples studied. All açaí samples showed high DPPH, ORAC and TEAC values, confirming the exceptionally high radical-scavenging capacity of açaí pulp previously reported by other researchers. CONCLUSION: The commercial samples showed higher antioxidant capacity and higher levels of anthocyanins and non-anthocyanic compounds than those of the genotype samples. Among the genotypes studied, L4P16 stood out for its higher contents of fibre and bioactive compounds and higher antioxidant capacity, indicating that this genotype has great potential for use in plant breeding programs that should be further explored. © 2016 Society of Chemical Industry.

ABSTRACT

A grande quantidade de grãos quebrados resultante do beneficiamento do arroz e seu baixo valor comercial tem levado as indústrias a buscarem alternativas para agregar valor a esse subproduto. O objetivo deste estudo foi avaliar as mudanças químicas e as propriedades viscoamilográficas em farinhas de arroz, obtidas a partir de grãos quebrados dos genótipos Irga 417, BRS Primavera e CNA 8502, submetidas ao processo de extrusão. Utilizou-se delineamento experimental inteiramente ao acaso, tipo fatorial 3x2, com quatro repetições originais e análise de variância para avaliar os dados obtidos. As farinhas dos diferentes materiais genéticos diferiram quanto ao valor nutricional e tecnológico. A farinha nativa da linhagem CNA 8502 apresentou maior teor de lipídios (0,45g 100g-1) e proteínas (10,23g 100g-1). De forma geral, as farinhas da Irga 417 apresentaram maiores teores de cinzas (0,39g 100g-1) e amilose (26,44g 100g-1). A extrusão diminuiu os teores de umidade e lipídios, elevou o teor de amilose, não afetou os teores de cinzas e proteínas e reduziu os valores de pico de viscosidade, viscosidade final, quebra de viscosidade e tendência à retrogradação, porém a magnitude da resposta dependeu das características inerentes a cada genótipo. As farinhas extrusadas apresentam potencial para aplicação em produtos instantâneos ou como ingrediente para produtos alimentícios nos quais são exigidas menores viscosidades, quando servidos a quente ou a frio, que suportem a agitação e retrogradem menos quando sejam resfriados.


The large amount of broken grains resulted from rice processing and its low commercial value have led industries to find alternatives to add value to this by product. The objective of this study was to evaluate the chemical and viscolamylographic properties changes in rice flour made from broken grains of genotypes IRGA 417, BRS Primavera and CNA 8502, subject to the extrusion process. It was used a randomized experimental design, type 3x2 factorial with four replications, and variance analysis to evaluate the data obtained for this. The flours of different genotypes differed on the nutritional value and technology. Native flour of CNA 8502 had a higher lipid content (0.45g 100g-1) and protein (10.23g 100g-1). In a general way, the flour of Irga 417 showed higher levels of ash (0.39g 100g-1) and amylose (26.44g 100g-1). Extrusion decreased the levels of moisture and lipids, increased the amylose content, didn't affect the ash and protein contents and reduced the viscosity peak, final viscosity, breakdown viscosity and retrogradation tendency, but the magnitude of the response depended of the defining features inherent genotypes. The extruded flours have potential for use in instant products or as an ingredient for food products in which lower viscosities are required when served hot or cold, supporting the agitation and retrograde least when they are cooled.

Este trabalho teve por objetivo estabelecer procedimento tecnológico para produção de fruta estruturada a partir de "mix" de polpa de cajá e mamão, procurando unir as propriedades sensoriais de cada uma das frutas e potencializar as características funcionais do produto final. Avaliou-se o efeito da combinação de pectina, gelatina e alginato de sódio, via metodologia de superfície de resposta, nas características do gel de fruta. As polpas de mamão e cajá e os estruturados obtidos foram caracterizados com relação aos compostos funcionais, avaliando-se o teor de taninos e carotenóides totais, além das análises de composição centesimal, pH, acidez titulável, sólidos solúveis, açúcares, atividade de água, carboidratos e valor energético total. Os resultados obtidos através do planejamento experimental indicam que para o estruturado misto de cajá e mamão, somente o aumento da concentração de gelatina afeta a firmeza do produto final. Os estruturados de frutas desenvolvidos apresentaram boa aceitação sensorial para todos os atributos avaliados. Com relação à intenção de compra, 70 por cento dos provadores responderam que provavelmente ou certamente, comprariam o estruturado misto de cajá e mamão se o encontrassem à venda.


The objective of this work was to establish a technological procedure for producing a structured fruit product from yellow mobin and papaya purees, as an attempt to combine the sensory properties of both fruits and potentialize the functional properties of the final product. The effect of different combinations of pectin, gelatin and sodium alginate on the fruit gel properties was evaluated by response surface methodology. Papaya and yellow mobin purees and the structured products were characterized in terms of functional compounds (total tannin and carotenoid contents), as well as centesimal composition, pH, titratable acidity, soluble solids, sugars, water activity, carbohydrates and total energetic value. The results obtained from the experimental design indicated that only the gelatin concentration affected the product firmness. The developed fruit structured products presented good acceptance for all evaluated attributes. The data concerning purchase intent indicated that 70 percent of the panelists would probably or certainly purchase the mixed yellow mobin and papaya structured product if they found it for sale.

Conduziu-se este trabalho,com o objetivo de estudar as propriedades funcionais tecnológicas de extrusados de terceira geração obtidos de misturas de farinhas de pupunha (Bactris gasipaes Kunth.) e mandioca (Manihot esculenta Crantz), por meio das análises de densidade aparente, índice de absorção de água, índice de solubilidade em água e viscosidade de pasta (RVA). Os extrusados foram formulados, adicionando-se 15, 20 e 25 por cento de farinha de pupunha à farinha de mandioca, sendo processados em extrusora monorosca, escala piloto. Os parâmetros de extrusão foram fixos, utilizando-se cinco zonas de extrusão com temperaturas de 30ºC, 40ºC, 60ºC, 65ºC e 70ºC; velocidade do parafuso 177rpm; taxa de alimentação 292g/min e matriz laminar de 1mm. Os extrusados de terceira geração obtidos apresentaram valores relativamente baixos ou intermediários de IAA e ISA, variando de 5,01 a 6,48g/g e 5,37 a 7,34 por cento para IAA e ISA, respectivamente. Após o processo de fritura dos extrusados, observou-se expansão e, consequentemente, redução na densidade aparente dos mesmos. O desenvolvimento ou aplicação de tecnologias como a extrusão, que permitam o aproveitamento de matérias-primas regionais, entre elas a mandioca e a pupunha, é uma forma de agregação de valor às riquezas existentes e, ao mesmo tempo, possibilita a diversificação de novos produtos alimentícios prontos para o consumo.


The objective of this work was to study the technological functional properties of third generation extruded products obtained from cassava (Manihot esculenta Crantz) and pupunha (Bactris gasipaes Kunth.) flour mixtures, in terms of apparent density, water absorption index (WAI), water solubility index (WSI) and paste viscosity. The extruded products were formulated by adding 15 percent, 20 percent or 25 percent pupunha flour to cassava flour, and processing the mixtures in a pilot scale single screw extruder. The extrusion parameters were fixed by using five extrusion zones (at 30ºC, 40ºC, 60ºC, 65ºC, and 70ºC); screw speed, 177 rpm; feed rate, 292g/min; laminar matrix with 1 mm. The formed third generation extruded presented relatively low or intermediate values of WAI and WSI. After being fried, the extruded elements were expanded and thus their apparent density were reduced. Development or application of technologies such as extrusion, which allow utilization of regional raw food materials such as cassava and pupunha, is a way of aggregating value to the natural resources, at the same time allowing development of new food products ready for consumption.
